Extract juice and pulp leaving shells. Cut .25 inch strips with scissors or knife. Add salt. Cover with cold water and stand overnight. Drain well next day and wash under running water. Cover with water and boil for 20 minutes and drain. Repeat this twice. Put sugar and cup of water into saucepan and bring to boil. Simmer five minutes. Drop in prepared strips and cook gently until syrup has boiled away. Spread on wax paper, separate well, roll in sugar and store in airtight container. Dip pieces into melted chocolate.
